Carrot & Cashew Loaf

Thanks Jules for this cracka recipe.....






2 slices wholemeal/ rye bread toasted and processed into breadcrumbs

2 carrots grated

2 zucchinis grated

1 onion chopped

2 cups cashews chopped

2 eggs

1 cup wholemeal self raising flour

1 teaspoon ginger chopped

2 tablespoons of parsley chopped



Combine all ingrediants, place in a 1 litre loaf pan and bake in a preheated 180 degree oven for 45 mins.
