2 minute Baked Egg


  • Got the munchies?

  • Want an excellent grain free, protein packed snack?

  • Need to feed unexpected guests?



All you need is:
a carton off eggs


and here are some topping suggestions:
onion, tomato, capsicum
spinach & leek
left over roast veges
left over roast meats or chicken - shredded
olives, sun dried tomatoes, grilled eggplant or capsicum
cheese - feta, goats, haloumi, ricotta, mozzarella, bococini
dried herbs
fresh herbs
cracked pepper


It just takes two minutes to prepare:
Preheat moderate oven (160 - 180 degrees)
Crack eggs into pre-greased muffin trays
Sprinkle with toppings, cheese, herbs or cracked pepper


Cook for 10-20 mins or until egg is golden and toppings are lightly browned.
Serve with a tangy relish, green salad or... just love.

Excellent to eat freshly baked or chilled.
