Paleo Hummus - a cauliflower alternative

The penultimate raw vege dip, great with salad and strips of BBQ meat, delicious on your homemade flat bread...  it is a nutrient dense food and could punch you up to your three serves of veges in one sitting (I recommend eight serves a day if you are serious about your health).


1.  Grate a quarter of a large cauliflower (or do the whole lot and reserve cauliflower for faux rice or paleo pizza base).  I add in a little carrot for sweetness too....
2.  Wizz up cauliflower and about 4 - 5 tablespoons of unhulled tahini, the juice of 2-3 lemons, 4-8 galic gloves, about 4 or 5 glugs of olive oil and Himalayan salt to taste.
3.  Taste it!  Adjust your garlic, tahini, lemon and salt according to your taste.

As you can see I am not a big one for measurements.  Measurements depend on the freshness of your ingredients and your taste.  Don't get caught up on measurements people!  Measuring cups were only invented in 1879, so people did just fine without them...
